With the theme of, “The Future is Dairy,” there was much to discuss at the European Dairy Association in Brussels, Belgium 7-9 November. Heads of several companies, ranging from FrieslandCampina to Lactalis and Arla Foods, detailed their moves to feed the planet while containing emissions from livestock and fending off those who decry the dairy sector as a polluting process.

Giuseppe Ambrosi, EDA president, opened the proceedings, noting, “We were and we are standing fully aligned behind the ambitions and the objectives of the EU’s Green Deal agenda. We did not see the EU Commission acting on the basis of some demands for the law making process: a science-based, impact assessed approach and a certain level of stakeholder involvement.” He noted that while the EU even publicised its launch of agricultural policies with a video of milk processing, the dairy industry has been asked to play less than an active part in the agenda, which “intends nothing less than to completely change the way we operate our businesses.”

He called on the assembled to “make dairy heard in the political space in Brussels from the very beginning of the next legislative term in July 2024. We simply cannot afford five more years in defence. When I say we, I mean the European lactosphére together with all those who want to reach the 2050 ambitions for our continent.”

As Jan Derck Van Karnebeek, CEO of FrieslandCampina noted, “The way we do dairy in Europe, we can do it right, and we should fight and stand for it.” He further opined that the ways farmers operate is not always understood by politicians and government. “They need to be viable from the farmers’ perspective. Biodiversity and animal welfare are complex to navigate, but farmers have a vital role to play here. Sustainability is about doing the right thing by the planet, but it needs to be enabled by economics,” he added. At FrieslandCampina, “We reward for environmentalism and sustainable outputs are a structurally important part of the journey. I’m a bit of an optimist. Customers are awake to fact that the environmental impact has financial value, and I think that’s a good thing.”

That went well. We had a transport strike and it rained, and after months of planning, the Dairy Industries Expo went ahead in Harrogate in the UK last week. People showed up for the inaugural event, and the feedback was all positive. It was gratifying to hold the only exhibition and seminars exclusively devoted to the dairy process in the UK, and to have people arrive and take away something useful.

So, we’ll be doing this next year. The date and venue are to be determined, but I wrote so much copy it will keep me in articles for months. My apologies for any exhibitor who I didn’t chat with extensively. I ran the seminars in conjunction with the very helpful Harrogate Convention Centre folks, and the time just flew by. Thanks to all the people who provided me with squeezy cows to distribute to the hard working staff. I’m looking at you, J&E Hall and Kersia. We also have already employed the baseball caps provided by Kersia, and the mini Maglite has been purloined by the offspring, Urschel. We ate Cuddon‘s freeze dried ice cream. What a treat.

The keynote speakers were all interesting. I was impressed that people interacted with the seminar speakers. I’d turn around at the end and there would be people watching and listening, and then getting their questions ready. They’d follow them to the stands to chat more. This is a result. Part of the idea of this exhibition and seminar was to bring together everyone in dairy, so they could have a dialogue.

In a way, it reminded me of my long ago wedding. So much time and effort spent, and it was all over in under 48 hours. I hoped to talk with more people, but I ran out of time to talk to them. Like my wedding, except my drink did not keep disappearing this time.

We will be planning. I will aim to carve out some time for walking the floors more. We will think about keynote speakers for next year. This event worked, so let’s do it again. Come join us.

This week, our inaugural, free to attend, Dairy Industries Expo begins in Harrogate, UK. It will be on Wednesday and Thursday this week, 4-5 October, and promises to be a collection of exciting equipment and services, dairy making discussions and all manners of processing patter for the attendees. I am very much looking forward to seeing you all in person at the Harrogate Convention Centre. Entrance 4 is on Ripon Road. Can’t wait! 

I have spent a lot of time this last week attending exhibitions and conferences, both in-person and online. PPMA was held in Birmingham (26-28 September), with several of our exhibitors also there with their fabulous stands. See photo. It was busy with attendees from all over, and I suspect ours will be similarly busy. 

Online, the IFCN held its annual Supporters Conference on 27 October, which was also held in-person in Chester, UK (25-28 September). During the sessions, the audience was warned about the long-term prospects of cheese making in the UK. 

Currently, UK cheese makers would generally rather sell abroad than in the UK. Time and investment to develop these export markets is already invested by some players. Once these markets have been created, they will start to take priority. However, retailers who have understanding and empathy, and who are prepared to work with their supplier, will find they will go the extra mile for them,” said Erik Elgersma, of Strategic Analysis Services, one of the authors of the Kite Consulting report on the matter. Our November issue will provide a feature covering this online conference, on the concerns consumers such as Generation Z have.  

We will also be covering our own seminars, being held at the Dairy Industries Expo. These will range from cheese making issues, to getting one’s human-machine interfaces right. Not to mention flooring, sampling, cooling, freeze drying, packaging and turnkey systems. However, there is no substitute for seeing things in person, so I encourage everyone who can to attend. See you there!

It is just over a week until the doors open at the Dairy Industries Expo in Harrogate and to say we’re excited about the exhibition and seminars is an understatement. It’s the same as if you’ve been waiting for a concert for ages, or your birthday. And then it arrives at last!

There will be a fine collection of exhibitors and seminars to examine and listen to at the show, ranging from J&E Hall‘s ammonia-based refrigeration systems (M405) to QualiTru‘s sampling systems presentation at 14:30 on 5 October. Analytics, shredding, cooling, flooring, sealing, packaging, turnkey automation and the Society of Dairy Technology‘s annual general meeting will all be part of the event, and much more.

I’m a bit stymied myself, as there will be so much to see and do, I wonder if I’ll be able to take it all in two days. However. I have my comfortable new shoes and if you see me and the rest of the Dairy Industries International team galloping about, you’ll understand why, as I’ll be getting all the information from the seminars, and the exhibitors, and walking around from place to place. I will be definitely getting my 10,000 steps in on both days.

The Dairy UK Annual Dinner was a highlight of my week last week. It was held in the Raffles Hotel in Whitehall, London, site of the Old War Office. Hugh Dennis, who is a rather amusing comedian, was the featured speaker. Plus, the food was good (Eton Mess and a very comprehensive cheeseboard) and the socialising delightful. I spent so much time chatting with the fellow tablemates, I forgot to go and network more. Thanks to Charlotte Walsh of AB Agri and Brian Longman of Defra for being such good company.

It did highlight the good work Dairy UK has been doing throughout the year, from the Dairy Roadmap to standardising carbon footprint tools throughout the industry, to raw milk contracts, to ensuring that whoever is in government, they recognise that dairy needs to play on a level playing field. As Paul Vernon, Dairy UK chair said, “We want dairy to be recognised for the important role it plays: in food security and nutrition, in livelihoods and economies, and in sustainable food systems.|

One example of the good work done is the Dairy Transport Assurance Scheme (DTAS), which provides assurance to milk purchasers that the transport of raw milk and milk fractions meets food safety requirements, recognised industry good practice and specific customer needs. This year, the scheme upgraded its standards, and these are now based on a modular format. Each member’s annual certificate, and their website listing, will display which modules they have been audited against, making it clear to potential customers exactly which operations each depot is certified for.

Sometimes it feels like a lot of dairy processing is paperwork, but getting the papers right (and digitising these papers) is a key focus for the sector, and one where Dairy UK is helping through its fieldwork, again and again. It’s not the easiest, but feeding the world with good, healthy products, is important.

News was on the radio (BBC Radio 4) discussing the drop in energy prices for consumers in the UK going forward. It featured an analyst noting that the volatility of oil and gas prices could disrupt the future – we all shouldn’t get too comfortable yet. I do feel like we, as an industry, could teach those commodities a thing or two about volatility. If we thought 2022 was bad, 2023 was even worse for our sector, and it has hit the farming end of the chain particularly hard.

For example, let’s have a look at the Kingshay Dairy Costings Focus Report for the England and Wales. At the end of 2022 milk prices had reached an average of 50.89 pence per litre (€0.59/litre), but since then, prices have fallen, “losing more in the first half of 2023 than they gained in the last half of 2022.”

I’m always amazed too that despite the almost inconceivable amount of barriers thrown into dairy farmers’ ways, from input costs (feed, fuel, veterinary fees, etc), weather, Russian invasions, vegans campaigning against them, people trying to steal equipment, ramblers coming onto the land and scaring the cows, and a lot of other things that come up on a daily basis, production continues to stay fairly steady. It is a testament to the good work of the dairy farmer, without which this industry would not survive, either in the UK or globally. When I drink my glass of milk I often raise it to the very hard work and energy that it took to provide me with it here in my house.

In other news, we are hard at work getting ready for the big Dairy Industries Expo 4-5 October in Harrogate, UK. We have speakers ranging from the Society of Dairy Technology‘s Nick Edwards, to Yorkshire Dama cheese maker Razan Alsous and Anna Bigalke of QualiTru Sampling Systems. My friend has just returned from a family holiday to South Korea, and in addition to the beaches and other sights, she enthused about the Imsil Cheese Theme Park. The park, which opened in 2004, is modelled after the village of Appenzell in Switzerland, well known for its cheese production. Its attractions include cheese-themed rides, a cheese experience centre and exhibition space where visitors can learn about cheese and create cheese themselves. Which sounded like a nice way to spend a day. They brought me back a t-shirt.  

Cheese production globally has been expanding. In 2023, it is estimated to reach 22.35 million metric tonnes, according to Statista. The European Union alone produced 10.55 million metric tonnes in 2022, making it the largest source of cheese overall.  

Meanwhile, the rise of countries such as China and India are anticipated to drive the global cheese market in the coming years, according to market analysts Research and Markets. Previously, the consumption of cheese was largely confined to western countries. However, with the increasing trend of food consumption patterns along with growing economy, rise in middle class population and increasing urbanisation, the consumption of cheese in these markets are expected to grow, the analysts note.
“The growth of the organised retail sector is also positively impacting the global cheese market. Until a few years ago, a number of global players were hesitant to sell their products in developing countries due to the fear of spoilage and lack of infrastructure, storage facilities and appropriate knowledge about the developing market,” the analysts say. 

I suspect companies such as Lye Cross Farm here in the UK could have something to say about exports to new markets, as it has a presence in South Korea and more than 40 other countries. Cheese sells and having that heritage is something that other markets appreciate, no matter where you are in the world.

The news that Tetra Pak plans to begin a dairy processing task force joint coalition, to pull together participants from across the dairy sector to improve approaches to decarbonisation, is a welcome addition to the ongoing global Pathways to Dairy Net Zero Initiative.

As the packaging and processing machinery provider to more than 160 countries, the Swedish packaging giant is well-placed to reach the processing and packaging components of the initiative, according to Donald Moore, executive director of the Global Dairy Platform and editorial board member at Dairy Industries International.

The firm is also working to reduce food waste, which is an estimated $400 billion annually on a global scale. Not to mention its ongoing school milk programmes, which it has been involved with since 1962. To date, it has delivered more than 9.4 billion food packages to schools through school feeding programmes, and over 61 million children worldwide.

Most recently, the packaging company has begun a new school milk programme in Bangladesh, a country with some of the lowest milk consumption per capita in the world, at 175ml, whereas the recommended daily intake is 250ml. It also relies heavily on milk powder to meet current demand in some regions.

Only 9% of the milk collected in Bangladesh reaches industrial processors, with the rest marketed traditionally or informally, according to the Department of Livestock Services in Bangladesh. The livestock and development project will set up 20 new dairy hubs in various locations, for the ongoing formalisation of the local dairy sector. The milk from these points will be processed and packaged for school distribution. The goal is to reach 300 schools with 60,000 primary school students obtaining safe and nutritious milk.

As usual, a good job being done by the dairy industry. We may not be able to alleviate all the malnutrition issues currently and immediately, but the process is ongoing.

It’s coming along, our Dairy Expo. We have been working hard on gathering together speakers and exhibitors to make your time in Harrogate 4-5 October a rewarding visit. I will say that actually putting on an exhibition is more complex than it looks, and I now have even more respect for those other organisers of the regular fixtures in the dairy calendar. Not the easiest thing to do, but we think it’ll be worth it.  

Razan Alsous, founder of Yorkshire Dama Cheese (yorkshiredamacheese.co.uk), is one of our speakers at the upcoming show. An immigrant to the UK like myself, she came with her family in a more pressing circumstance – in the wake of the war in Syria and to keep her children safe. Landing in Yorkshire and keen on using the local, delicious milks, she and her husband have built a thriving cheese business over the past several years, with variations on a halloumi-type “squeaky cheese” for grilling, which includes rosemary and za’atar inclusions, among others, in cow and goat versions. Butter, yogurt, labneh, ghee and queso fresco are all made in the Sowerby Ridge location, which has been recently expanded with new lines for products. Her presentation on 4 October at 10am is sure to make you want to try her products and to inspire us all. 

FD Reviews’ Stephen Minall will be speaking about food and drink development support at 1:30pm on 4 October. The advice is for food business start-ups and he will be explaining how his video service works for companies seeking impartial and honest review of their product ideas, as well as directions on how to make them right for the consumer market.

We cannot forget about the Society of Dairy Technology and its contribution as a main sponsor of our exhibition. I think Nick Edwards is probably one of the busiest retirees I know as its president, and the Society has done an amazing job of combining the knowledge of people in the business for years, with the up and coming new graduates from the dairy training programmes in the UK and Ireland. I think his talk and its meeting will be the highlight of our conference sessions on 5 October at 10am.

This week, our registration platform for the Dairy Industries Expo will be going live. That, and the news that our sister publication Confectionery Production has agreed to join us in Harrogate, UK in October, for its conference, means that this autumn will be a very exciting time for our magazine and company.

I hope everyone can join us for the three-day exposition 4-5 October. We hope to have people from processor to plate, from suppliers to trade consumers of productions equipment and ingredients there. Plus both chocolate and cheese.

Speaker-wise, the lineup is quite appealing. The Society of Dairy Technology is joining us at the show, which I am sure will be a great experience for us, as well as attendees. Donna Berry from the news site Berry on Dairy will also be featuring, as well as cheese maker Razan Alsous from local cheese company Yorkshire Dama Cheese. We will be adding more speakers as we go on.

Truthfully, Sam Bull and I have been delighted by the interest shown by the industry for this event. It has personally been very heartening to see people enjoy the idea of the expo and as the editor for the past (nearly) 18 years, it is really quite thrilling to throw a dairy party, and for people to want to come. To paraphrase actress Sally Field’s acceptance speech at the 1984 Oscars, “You like us, you really like us!”

Our events folks, Amy and Lauren, are hard at work on the details of the project, to make it a smashing success. In a way, an event like this showcases the entire chain of trade magazine publishing, from wordsmith and sales to events promotion. It is an excellent chance to meet up and exchange ideas about our favourite subject, dairy. And to add chocolate and sweets (candy) to the mix.

Ok, that’s me. Off to go get some coffee to carry my milk in. Happy Monday all.
